Grilled Branzino for One

Ever since I got my grill, I’ve been making EVERYTHING on it. Any chance I get to fire it up, I do. Today, I was in Whole Foods and saw Branzino — so of course I bought one, had the butcher scale and gut it, and I took it home to grill.

Everything just seemed to be falling in place for me to have a grilled fish this week to because I saw a grill fish basket on Amazon on sale and I recently purchased that so, I was READY.

For those of you who may not know, I worked in the restaurant industry for just about 10 years. From being sous chef, working my way all the way up to executive chef, and even doing R&D work for several restaurants from NYC to Miami to create menus and specialty dishes.

In the restaurant world, after we feed everyone during service, we need to eat too — and that’s where the family meal comes in. One of us makes a communal meal for all of the staff to eat, share, and bond over. A moment where the the chaos of the kitchen halts and we take care of ourselves after hours of taking care of other peoples bellies’.

This was my favorite dish to make my staff: a poached garlic and sausage rigatoni pasta. The sauce is creamy, its full of herbs, and the pasta sticks to your ribs, ensuring a good nights sleep lol.

This grilling season I’ll be teaching yall how to grill, and how to grill for ONE, or two if you’re having company. First recipe of course is my Jerk Chicken. If you don’t know this about me, before I began taking my online recipe sharing serious, I was a private chef, caterer, and R&D chef for several restaurants. In addition, I sold platters because I got hurt a work once and couldn’t be in the establishment until my broken bone healed lol.

Every week, I had a certain day for certain menus. Monday was Rasta pasta, Tuesday was tacos, Wednesday was wings, Thursday was Hibachi, and Friday was Soul Food. Here’s one of the platters in question:

I used to teach cooking classes when I lived in Miami. I would get REQUESTS for this specific chicken dish. For some reason, a lot of people aren’t familiar with or dont know how to use tarragon to its full potential. This recipe change a lot of my attendees minds. Maybe itll change your too if you’re not already on the tarragon train. It’s a delicious herb - yes it’s earthy, but paired right, it can bring out brightness that you didn’t expect from chicken thighs.

What Does Tarragon Taste Like ?
